It was nice to see this meme in reverse for once.
Only the storage usage has been a problem for me, but that is much easier to handle now. I do wish there was some better documentation for exactly that.

Also consider that Instagram uses aggressive image compression and then you import from that to Pixelfed, which also does its own compression. No wonder the quality is questionable.
Have you tried adding an original image to Pixelfed?
Not natively in Pixelfed.
This is a setting by the admin of that Pixelfed instance. Try another instance, if you are unhappy with the quality.
Who are they?
Mint is based on Ubuntu and LMDE is based on Debian. I think Mint is more up-to-date and more newbie friendly.
You can try and fetch an earlier post manually and see if that works.

Your instance won’t start fetching any posts from a community, until someone from your instance subscribes to it. Then it will fetch the last 25 posts (I think) and then all future posts.
This is something PeerTube already does. Viewers of a video will be a peer and so can other PeerTube servers also be for each others videos.
Bandwidth isn’t the biggest issue. Storage is. The video need to be stored somewhere and storage is expensive.
We need something like Siacoin, that’s easy to use and easy to donate or sell cheap storage.
Depends on where you are in the world. It’s sadly not available in Denmark on any streaming services.
One of the reasons for me not to switch, is because there is no Linux client.
